Fermented onsite in Wakefield from Grade A molasses, then distilled and aged for 19 months in a first-fill ex-Wild Turkey bourbon cask, this release reveals a softer, rounder profile than its predecessor. Extended time in fresh American oak has brought greater integration, deeper caramelisation, and a notably creamier mouthfeel.
As with every release in the series, Cask No. 2 is drawn from a single barrel, unblended, non-chill filtered, and bottled by hand. No adjustments. No repeats. Just the cask speaking for itself.
Each bottle is accompanied by a signed collectors card, allowing you to document the evolving character of the series.
Cask No. 2: Tasting Notes
Nose: Toasted coconut, vanilla pod, soft caramel, warm oak
Palate: Creamy caramel, coconut cream, gentle spice, light bourbon sweetness
Finish: Smooth and rounded, with lingering vanilla, oak, and soft toffee notes
